OCTOPUS À LAGAREIRO

INGREDIENTS

1.5kg octopus

1 onion

2 bay leaves

6 cloves of garlic

½ red pepper

½ yellow pepper

½ green pepper

1kg potatoes

1 bunch of parsley

1 teaspoon vinegar

Salt

Black peppercorns

HOW TO PREPARE

  • Cook the octopus in the pressure cooker with a whole onion, a bay leaf, salt and pepper for 30 minutes.
  • Once cooked, remove it from the pan and place it in an earthenware dish.
  • Peel the garlic, cut the peppers into wide strips, add the potatoes with their skins and the rest of the ingredients to the dish.
  • Sprinkle with parsley, drizzle with olive oil and bake at 200ºC for 40 minutes.
  • Sprinkle with vinegar.
  • If you want to make this dish more succulent, place 150g of diced bacon and a clove around the octopus before it goes into the oven.
