OCTOPUS SALAD

INGREDIENTS

1 medium octopus (about 1kg)

1 chopped red onion

2 chopped garlic cloves

1 chopped red pepper

1/4 cup olive oil

Juice of 1 lemon

Salt and pepper to taste

Chopped parsley to taste

HOW TO PREPARE

  • Cook the octopus in boiling water for about 30 minutes, or until tender. Then leave to cool.
  • Mix the onion, garlic and chilli in a bowl.
  • When the octopus is cold, cut it into pieces and add it to the bowl with the vegetables.
  • Season with olive oil, lemon juice, salt and pepper to taste. Mix well.

Finally, add chopped parsley to taste and serve the dish cold.
