OCTOPUS RICE ALGARVE STYLE

INGREDIENTS

1.5kg octopus

0.5 kg of rice

0.5kg tomatoes

1 green pepper

0.5 dl olive oil/ 1 little oil

1 onion

4 cloves of garlic

1 bunch of coriander

Cloves

Salt and pepper

White wine to taste

HOW TO PREPARE

  • The octopus is washed and cleaned and cut into regular pieces.
  • In the meantime, chop the onion and garlic very finely, pour olive oil and a little oil into a pan and let it heat up.
  • Add the garlic and onion and leave to sauté. Add the cloves, the bunch of coriander and the crushed tomatoes and bring to the boil.
  • Add the octopus, a little water, season with salt and pepper and continue cooking.
  • When the octopus is almost cooked, add the rice, a little white wine, water if necessary and more chopped coriander.
  • Once cooked, it should be served straight away.
